Raclette croffle with melted Engadin cheese
Two ways

On the plate or as a croffle

Classic, we serve glacier raclette in the winter season, melted on the plate, with potatoes, cornichons, pickled onions and bread. And because we're the Pförti, the raclette then also comes as a croffle: with figs, Grisons cured ham or pears.

In the winter season we offer a wide selection of Gletscherraclette varieties, from mild to spicy. Ask us for the current line-up.

Winter Edition

When it gets cold outside, it gets cheesy in here

How it works

We serve glacier raclette in the winter season, freshly melted on the plate or as a raclette croffle.

Season & summer

From spring to autumn, the raclette takes a summer break. If the craving for melted cheese strikes anyway: our glacier fondue (house mix) is available all year, in the garden in summer. And mobile raclette is still an option: our Raclette Bike comes to your event all year round.

Our raclette comes from Sennerei Pontresina, the same dairy that makes our glacier fondue. The full dairy story is on our fondue page.

Fancy fondue too?

From the same dairy comes glacier fondue: in Basel exclusively at the Pförtnerhaus, in summer even in the garden.

Raclette FAQs

What is glacier raclette and where is it from?

Gletscherraclette (glacier raclette) is a speciality of Sennerei Pontresina in the Upper Engadin, made to the dairy's own recipe from top-quality milk from animal-friendly farms. The cheese is aged at least six months, making it more intense, balanced and deep than a young raclette.

Can you eat unlimited raclette at your place?

No. We serve the glacier raclette in portions at your table or as a raclette croffle, but with cheese that has been aged for at least six months.

What is a raclette croffle?

A Pförti speciality: croissant-waffle dough baked in the croffle iron, topped with melted glacier raclette and cornichons. Crisp, aromatic, unusual. Available in the winter season, check the menu for current availability.

What's the minimum number of people for raclette?

Just one, raclette is perfectly enjoyable on your own here. From ten people, we're happy to get an email to [email protected] or a quick call, then we'll plan your gathering individually.

When is raclette available at Pförtnerhaus?

In the winter season, at the table and as a raclette croffle. In summer we recommend our glacier fondue in the garden, the house mix is available all year. Check our menu for current availability.
